12 new-to-me recipes:
  1. Eggnog Cream Pie - absolutely a keeper!  



2012

January:  
  • Artisan Bread (tried & true)  
  • Chicken Parm (new-to-me, from here.) 
  • Guacamole (new-to-me. I modified the recipe according to what I had in the house. It was pretty good, but next time I'll add the onion!) 
    • 1 avocado
    • 1/4 roma tomato
    • 2 tbsp onion, minced
    • 1/2 tsp minced garlic
    • 1/2 tsp lemon juice
    • Sea salt & black pepper to taste
    • Dash of paprika
    • Mix & mash together & enjoy! 
    • (makes enough for a good-size snack for one person)


February:
  • Oriental BBQ Pork Salad (new-to-me. I replaced the carrots & pea pods with arugula and the ginger with dried mustard powder at the last minute when I realized I was out. I'd add in the carrots & make sure I have ginger next time - but this is GOOD!)  
    • Note: I made it again & added the ginger, peas & carrots. I was really sad when I realised that I'd forgotten the sesame seeds (after it was gone.) I think my ideal recipe would leave out the peas, add in arugula again, and DON'T forget the sesame!
  • Creamy Tomato Soup (this one's my recipe, slightly adapted from the one my mom taught me to make.)
  • Dessert Crepes
  • Quinoa salad - new to me, recipe coming! Loved it! And, it was simple.
  • Cookies (chocolate chip, white macadamia. These are delish! I think the recipe comes from the butterscotch chip-its bag from back in the day.)
  • Oatmeal Cookies (from a co-worker!)
  • Biscuits (my adaptation.)
  • Lemon-Dill veggie/pretzel dip (mentioned in the Creamy Tomato Soup recipe post.) This is an original recipe.
    • Ingredients:
      • ½ c. sour cream
      • ½ c. mayonnaise
      • 1 tbsp dill
      • ½ tbsp dried minced onion
      • ½ tbsp dried parsley flakes
      • ½ tbsp lemon juice 
    • Directions:
      • Mix all ingredients together.
      • Let sit in fridge until ready to serve.
March:
  • Chipotle Mayo - I added in a clove of garlic & a squirt or two of lime juice. Next time though: not adding in the extra adobo sauce & I'll probably limit it to one chipotle pepper. I want it to be a nice accompaniment, but this stuff kinda takes over. (Maybe it's my brand of chipotle peppers in adobo? which btw, I found in the Mexican foods section at Zehrs. If you can find it in Fergus, you can find it anywhere!) Serve with sweet potato fries or spread on sandwiches, burgers, etc.
  • Chicken & Dumplings - tried & true! 
  • Crockpot Roast (new to me...I kinda went with what I thought would be good. First pressure cooked the roast with a bit of water, beef bouillon & spices (it was frozen, and it's not a good idea to cook frozen in the slowcooker.) Then added a gravy packet, more water, onion, carrot & potato while in the slow cooker. YUM.)
  • Creme Brulee -  a Dr Oetker mix, but it was good! (Maybe not good-for-you though.)

April:
  • Summery Cucumber "pickles" - a fave that my mom used to make, with a twist, if you choose it.
  • Ham & Swiss Poppyseed Sandwiches - (new-to-me) I can't wait to try this recipe as it's written. This time, I mixed all the ingredients together (except the ham, swiss & bread) and spread it on the bun, then added ham & swiss. We ate them cold, because it was a picnic lunch, but I'd love to try them hot! 
  • Brazilian Passionfruit Mousse - I couldn't find passionfruit in any form, so it became Lemon mousse - but it was good! Hopefully I can find passionfruit next time!
    • makes 24 LARGE servings 
    • 8 cups whipping creamed, whipped to peaks
    • 4 cans sweetened condensed milk
    • 1/4 c. sugar
    • 1 c. lemon juice
    • Directions: Mix last three ingredients together. Fold in 1/3 whipped cream, then fold in the rest. Place in individual bowls, and allow to set in the refrigerator for 30 minutes to an hour. Serve & enjoy!


May:
  • Chili w/ TVP - the recipe for chili is different every time in this house. But the TVP was new! New ingredient! New fan!
  • Creamy Chicken Taquitos - new-to-me! I finally tried it! With these adjustments:
    • Made a smaller recipe
    • Used spelt tortillas (delish!)
    • Used a "La Vache Qui Rit" cheese slice for cream cheese
    • Used fresh garlic, eliminated cilantro
    • Used cheddar cheese instead of pepperjack
    • Served w/ sour cream, and avocado pieces soaked in salsa.
  •  Honey-Garlic BBQ sauce - my own recipe.

  • Creamy Butternut Squash & Apple Soup - borrowed from a friend awhile back. SO good! It's completely vegan, which is great too.
